The Caye Caulker chef is back on the beach tonight and he’s got another recipe for you to try. Armed with a red snapper and other local seasonings, Maurice is ready to show you how to make Thai Sweet and Sour Fish.
Thai Sweet and Sour Fish with White Rice
Ingredients:
1 whole snapper
2 tablespoons olive oil
1/4 fresh pineapple chopped
1 zucchini chopped
1 carrot chopped
1 bell (green) pepper chopped
6 tablespoons ketchup
1/2 teaspoon chilly flakes
1/2 lime
1 cup water
1/4 teaspoon curry powder
Salt and pepper to taste
For Garnish:
1/4 mango chopped
1/4 tomato chopped
1 carrot chopped
1 green pepper chopped
Method:
Season fish with salt and black pepper.
In a large frying pan, heat oil on high heat.
After oil is hot, add carrot, green pepper, pineapple and zucchini.
Add fish.
Add the juice from 1/2 lime, curry, ketchup and chilly flakes.
The fish will cool for five minutes on each side and the vegetables and sauce should simmer for 15-20 minutes.
Presentation
Place white rice on plate taking care not to crowd the plate.
Add garnish and put fish on plate.
Drizzle rice and fish with sauce and serve
