B.S.I. Release: Maillard Reaction Affects Molasses Tanks
Earlier we told you about the fines being imposed against Santander for the breach of environmental compliance. The other sugar factory in the north is also facing its own challenges. ASR/B.S.I. confirmed today that there is a sharp deterioration in the quality of molasses. According to the company, it has confirmed a case of Maillard reaction in tank number one. This is a chemical reaction signaled by froth fermentation which is attributed to the quality of cane delivered at the mill which contains high levels of reducing sugars. The extent of loss and damages are still undetermined.
