What’s on the Menu for Cuban Presidential Visit?

What do you serve the Cuban President and his delegation on an official state visit to Belize? Well, the government turned to Chefs Sean Kuylen and Einer Marin for a Belizean inspired cuisine to excite the palate of the Cuban President and his delegation, Belizean parliamentarians and other all invited guests.  News Five was able to get a quick interview with the chefs.

“We di deal with Cuba so we are doing things that they don’t have. Like I hear, dehn noh got corn, dehn noh eat coconut. They noh eat pepper so I can’t put black pepper, I can’t put jabanero, but we do spice up the things in different ways. Classic hudut. We have people here from protocol; we have the chefs and stuff from yesterday and they have been monitoring us and they approve. So hudut dah coconut milk, fish, no pepper, okro.”

“What else do we have for them?”

“We have braised beef, short ribs, sweet potato; lotta veggies like okro and radish and choco – things that grow from Belize, of course.”

“For dessert we made a basil mint and cilantro sponge cake with a mango milk ganache and a fresh lime meringue with a brown sugar crumble and a white brown jell on top.”
